From Piadina to Poison: How Food Changed in 50 Years

What is your happiest memory as a child?
I have many, and many of those are connected to food.
One in particular I remember it like it was yesterday.
My grandma, in her old countryside house, rolling out the dough for piadina romagnola, a regional delicacy.
The scent of fresh ingredients filled the air as she lit the fire under the stove.
I have the best memories about that house. The kitchen wasn’t just a place to cook, it was where food was turned into connection, tradition, and nourishment.
Quoting Lord of the Rings though, "the world is changed. I feel it in the water. I feel it in the earth. I smell it in the air. Much that once was is lost....for none now live who remember it."

When Food Becomes Poison
That memory was so powerful that when I landed in Australia, the first job I looked for was as a pizza chef. I wanted to create that same magic—except reality had other plans. The first kitchen I stepped into, I was yelled at to “get the f*ck out.”
Fast forward 14 years, I became a qualified chef with a decade of experience. But here’s the plot twist: I developed food intolerances—one of which is to flour itself.
Today just being around it makes me sneeze. Eating it? Much worse.
At first, it made no sense. How could something I love - pizza, pasta, croissants, bread, bread crumbed veggies (the list is long) - make me sick?
It wasn’t until I started studying nutrition and food history that this truth became impossible to ignore.

The Food We Eat Today is Not the Food of Our Grandparents
Your body isn’t broken—our food is.
Overexposure to certain foods triggers an autoimmune response.|
Your gut inflames (the villi in the intestine specifically) blocking nutrient absorption. And when your body can’t get minerals from food, it steals them from your bones and teeth.
This isn’t new and it took me 35 years to land on this knowledge just because I was really looking for it:
In 1930, a dentist named Weston A. Price traveled the world studying ancient tribes who had never been exposed to modern food. Their rate of tooth decay? 0 to 2%. No toothbrush and they definitely did not know how to floss.
Then he studied the same tribes AFTER they were introduced to processed foods. The result? 70-90% tooth decay, bone structure changes (face, pelvis, feet), and a weakened immune system, all within one generation.
And it all started with processed foods (and drinks).
Now, did your dentist ever tell you that?

Flour Today is Not the Flour of the Past
Even if you avoid ultra-processed foods, grains themselves have changed:
✅ The germ—the most nutritious part of the grain—has been stripped out. Unless you grow and grind it yourself, flour today has ZERO nutritional value.
✅ Most commercial flour is treated with pesticides like glyphosate—a gift from Monsanto (the creators of Agent Orange used during Vietnam war, you can look for the effects on new borns published by NatGeo) and later acquired by Bayer (a pharmaceutical company).
✅ If it’s in flour, it’s in everything derived from flour—which means one-third of what’s sold in grocery stores, including beer and most processed foods.
Nothing Nonna would have approved of.
The solution is always the simplest: grow your own food and if you can’t yet, buy the highest quality of food money can buy.
The Silent Killer of Health
Messing with this one ingredient, hand in hand with processed sugar, has led to an explosion of diseases—gut disorders, metabolic dysfunction, and autoimmune issues.
And the worst part? Most people never question it or they would brush it off with ‘we all have to die of something’ just to reconsider that statement when the something comes knocking few decades in advance.
If you think the above statement is too dramatic, you just have to look at the statistics in your country or go to a hospital on a tuesday.
But if you do question it, if you see something is wrong and you want to build a strong, thriving body that feels and functions at its best—without needing doctors, pills, or crash diets to undo the damage, then it’s time to take control.
The moment you understand how your body works and how everything interacts with it, not only your body becomes your chemistry lab, but also knowledge becomes an asset you can transfer to others.
